Ingredients
    For the puri:
  • 2 cups whole wheat flour
  • 1/4 teaspoon salt
  • Water for kneading
  • Oil for frying
  • For the aloo (potato) masala:
  • 2 medium-sized potatoes, boiled and mashed
  • 1/2 onion, finely chopped
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon garam masala powder
  • Salt to taste
  • Oil for cooking
  • Chopped coriander leaves for garnish
Instructions
  1. Mix wheat flour and salt in a mixing bowl. Gradually adding water, knead the dough until it becomes smooth and soft. Cover it with a wet cloth and keep it aside for 10-15 minutes.
  2. In a pan, heat some oil over medium heat. Add the cumin seeds and mustard seeds and let them crackle.
  3. Add the chopped onion and sauté till it turns translucent.
  4. Add the turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Mix well.
  5. Add the mashed potatoes and mix everything together. Cook for a few minutes till the masala is well combined and cooked.
  6. Divide the dough into small equal-sized balls and flatten them slightly. Take one ball and roll it into a small circle.
  7. Heat oil for frying in a kadhai or deep frying pan over medium heat.
  8. Gently drop the rolled puri into the hot oil and fry till it puffs up and turns golden brown on both sides.
  9. Remove the puri from the oil and drain excess oil on a paper towel.
  10. Repeat the same with the remaining dough balls.
  11. Serve the hot Aloo Puri with the potato masala on the side. Garnish with chopped coriander leaves.
Note
  • Adding a little oil or ghee to the dough while kneading will make the puris softer.
  • You can adjust the quantity of spices as per your preference.
  • You can also add some green peas, cauliflower, or carrots to the potato masala for added flavor and nutrition.
