Ingredients
    For the Patties
  • 4 potatoes (boiled and mashed)
  • 2 tablespoons breadcrumbs (or cornflour)
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon chaat masala
  • Salt to taste
  • 2 tablespoons chopped fresh coriander
  • 1 teaspoon ginger (grated)
  • Optional Stuffing
  • 2 tablespoons boiled green peas
  • 1 teaspoon cumin seeds
  • 1 teaspoon amchur (dry mango powder)
  • For Frying
  • 2 tablespoons vegetable oil or ghee
Instructions
  1. Boil and mash the potatoes until smooth.
  2. Add breadcrumbs (or cornflour) for binding and mix in red chili powder, garam masala, chaat masala, coriander, and salt. Combine well.
  3. Heat a pan and sauté the boiled peas with cumin seeds and amchur powder. Cool before use.
  4. Take a portion of the potato mixture, flatten it, and optionally add the peas stuffing in the center.
  5. Roll into a ball and flatten into a round patty.
  6. Heat oil in a non-stick pan.
  7. Place the patties in the hot oil and cook on medium heat until golden and crispy on both sides (about 3–4 minutes per side).
  8. Serve hot with green chutney, tamarind chutney, or even plain yogurt for a refreshing side.
Note
  • Ensure the potatoes are dry before mashing to avoid soggy patties.
  • Adjust spices to taste, depending on your preference for heat and flavor.
  • Can be air-fried for a healthier version.
