Ingredients
    For Marination
  • 100 grams Chicken (small curry-cut pieces)
  • 1/4 teaspoon Salt
  • Turmeric powder a pinch
  • 1/2 teaspoon Chili powder
  • For Masala Powder (dry roast & grind)
  • 1/2 teaspoon Coriander seeds
  • 1/8 teaspoon Cumin seeds
  • 1/8 teaspoon Fennel seeds
  • 1/2 teaspoon Poppy seeds (khus khus)
  • 1 Green cardamom
  • 1 Cloves
  • 1/2 Cinnamon (small piece)
  • For the Curry
  • 1/4 cup Onion (finely chopped)
  • 1 Green chili (slit)
  • 6 Curry leaves
  • 1/2 teaspoon Ginger-garlic paste
  • 1/2 Red tomato (finely chopped)
  • 1 teaspoon Refined oil
  • Salt (for seasoning) to taste
  • Water as required

  • Fresh coriander leaves
Instructions
    Marinate the Chicken
  1. In a bowl, mix the chicken pieces with salt, turmeric powder, and chili powder. Set aside for 30 minutes.
  2. Prepare the Masala Powder
  3. In a dry pan, roast coriander seeds, cumin seeds, fennel seeds, poppy seeds, cardamom, cloves, and cinnamon over low heat for 2-3 minutes until aromatic.
  4. Let the spices cool, then grind into a fine powder.
  5. Cook the Curry
  6. Heat oil in a pan, add slit green chili and curry leaves, and sauté for 30 seconds until aromatic.
  7. Add the chopped onions and sauté on medium heat until they turn golden brown (about 5-7 minutes).
  8. Add ginger-garlic paste and fry for 1 minute on low heat.
  9. Add the Marinated Chicken
  10. Add the marinated chicken and cook on high heat for 2 minutes, stirring frequently.
  11. Continue to cook on medium heat for 4-5 minutes until the chicken is browned.
  12. Add the Masala Powder and Tomatoes
  13. Add the ground masala powder and a splash of water to prevent sticking. Mix well.
  14. Season with salt, and sauté on low-medium heat for 5 minutes until the chicken is well coated.
  15. Add chopped tomatoes, mix, and cook covered on low heat for 10 minutes until the tomatoes become soft and pulpy.
  16. Simmer the Curry
  17. Add 50 ml of water, mix, and cook covered on low heat for 10 minutes until the chicken is tender and the curry reaches the desired consistency.
Note
  • Marinate the chicken longer for a richer, deeper flavor.
  • Adjust the spice level by reducing the number of dried red chilies.
  • Use white vinegar for an authentic tangy taste.
  • Sauté the onions well to achieve a flavorful base for the curry.
