  • 1/2 cup cooked, shredded chicken (seasoned with a bit of salt and pepper)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Optional: diced onions, bell peppers, tomatoes, or any preferred vegetables
  • Olive oil or butter for frying
  • Sour cream, salsa, or guacamole for serving
Instructions
  1. If using, sauté any vegetables (like onions and bell peppers) in a small pan until they are soft. Set aside.
  2. In a bowl, mix the shredded chicken with the cooked vegetables (if used) and half of the cheese.
  3. Lay the tortilla flat on a clean surface. Spread the chicken and cheese mixture on one half of the tortilla.
  4. Sprinkle the remaining cheese over the top.
  5. Fold the other half of the tortilla over the filling to form a semi-circle.
  6. Heat a small amount of olive oil or butter in a pan over medium heat. Place the folded tortilla in the pan.
  7. Cook for about 3-5 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  8. Remove the quesadilla from the pan and let it sit for a minute before cutting into wedges.
  9. Serve with sour cream, salsa, or guacamole on the side.
