Ingredients
  • 100 boneless chicken, cut into small pieces
  • 1/4 yogurt
  • 1/2 teaspoon ginger-garlic paste
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon cumin powder
  • 1 tablespoon cornflour
  • 1 tablespoon rice flour
  • Salt to taste
  • Oil for frying
  • Fresh curry leaves for garnish
  • Green chilies for garnish
  • Special Masala (for garnish)
  • 1/4 teaspoon chaat masala
  • 1/4 teaspoon dry roasted cumin powder
  • Pinch of black salt
Instructions
    Marinate the Chicken
  1. In a bowl, combine yogurt, ginger-garlic paste, red chili powder, garam masala, turmeric, salt, lemon juice, cumin powder, cornflour, and rice flour. Mix well until the chicken is thoroughly coated. Marinate for 15 minutes.
  2. Frying
  3. Heat oil in a deep frying pan on medium-high heat. Once hot, carefully drop the marinated chicken pieces into the oil. Fry until golden brown and crispy, about 6–8 minutes. Remove and drain on paper towels.
  4. Garnish and Serve
  5. Sprinkle the special masala over the fried chicken for extra flavor. Garnish with fresh curry leaves and green chilies. Serve hot.
Note
  • For added flavor, add a few drops of lemon juice before serving.
  • You can adjust the chili powder based on your spice preference.
  • Use fresh yogurt for the best texture in marination.
