Ingredients
  • 150 grams boneless chicken, cut into bite-sized pieces
  • 2 tablespoons plain yogurt
  • 1 teaspoon vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 -inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust to taste)
  • 2 tablespoons ground almonds or cashews
  • 1 tablespoon tomato paste
  • 1/2 tablespoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon chili powder (adjust to taste)
  • Salt, to taste
  • 1/4 cup water
  • 2 tablespoons fresh cream or coconut milk
  • Chopped cilantro (coriander leaves), for garnish
Instructions
  1. In a bowl, marinate the chicken pieces with yogurt, turmeric powder, and a pinch of salt. Let it sit for 15 minutes.
  2. In a pan, heat the vegetable oil over medium heat. Add chopped onions and sauté until they turn translucent.
  3. Stir in minced garlic, grated ginger, and chopped green chili. Cook for another minute until the raw smell disappears.
  4. Add ground almonds or cashews, tomato paste, ground cumin, ground coriander, and chili powder. Cook the spices for 2-3 minutes, stirring continuously to avoid burning.
  5. Now, add the marinated chicken pieces to the pan and cook until they are browned on all sides.
  6. Pour water into the pan and bring it to a gentle simmer. Cover the pan and cook the chicken for about 15-20 minutes or until it's tender and fully cooked.
  7. Stir in the garam masala and season with salt according to your taste.
  8. Finally, add fresh cream or coconut milk to the chicken and mix well.
  9. Let it simmer for another 2 minutes.
  10. Garnish with chopped cilantro (coriander leaves) before serving.
Note
  • For a more tender and juicy chicken, marinate the chicken pieces in yogurt and spices for at least 30 minutes before cooking.
  • Adjust the level of spiciness according to your preference. You can add more or fewer chili peppers to suit your taste.
  • If you prefer a nuttier flavor, you can toast the nuts (almonds, cashews) before blending them into the sauce.
