  • 1/2 cup of urad dal (split black gram)
  • Salt, to taste
  • 1/4 teaspoon of asafoetida (hing)
  • Oil, for frying
  • 1 cup of yogurt
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of red chili powder
  • Tamarind chutney, as desired
  • Coriander leaves, for garnishing
Instructions
  1. Soak urad dal in water for 4-5 hours.
  2. Drain the water and grind the dal to a smooth paste. Add salt and asafoetida to the batter and mix well.
  3. Heat oil in a pan. Take small portions of the batter and drop them into the hot oil. Fry until golden brown and crispy.
  4. Remove the vadas from the oil and soak them in warm water for 10-15 minutes. Squeeze out the excess water and place the vadas on a plate.
  5. Whisk the yogurt with cumin powder, red chili powder, and salt to make a smooth mixture.
  6. Place the vadas in a serving dish and pour the yogurt mixture over them.
  7. Drizzle tamarind chutney on top of the vadas.
  8. Garnish with coriander leaves and serve.
