Ingredients
4 chicken wings
1teaspoon ginger-garlic paste
1/2teaspoon turmeric powder
1/2teaspoon red chili powder
1/2teaspoon garam masala
1/2teaspoon salt (or to taste)
2tablespoons all-purpose flour (maida)
1tablespoon cornflour
Oil for frying
For the BBQ Sauce:
2tablespoons tomato ketchup
1teaspoon tamarind pulp (imli)
1teaspoon soy sauce
1teaspoon red chili sauce or hot sauce
1teaspoon jaggery (or brown sugar)
1teaspoon roasted cumin powder
1/2teaspoon smoked paprika (optional)
1 clove garlic, finely minced
1tablespoon oil
1tablespoon water (adjust for desired consistency)
Instructions
In a bowl, combine chicken wings with ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix well and marinate for at least 30 minutes.
In another bowl, mix all-purpose flour and cornflour. Coat the marinated chicken wings evenly in this mixture.
Heat oil in a deep pan or kadai. Once hot, fry the chicken wings in batches until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
Heat oil in a small pan. Sauté minced garlic until fragrant.
Add tomato ketchup, tamarind pulp, soy sauce, red chili sauce, jaggery, roasted cumin powder, and smoked paprika. Stir well.
Add water to adjust the consistency and simmer for 2-3 minutes until the sauce thickens slightly.
Toss the fried chicken wings in the prepared BBQ sauce until they are evenly coated.
Serve hot with a garnish of fresh coriander or sesame seeds, accompanied by a side dip of your choice.
