Ingredients
  • 4 chicken wings
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt (or to taste)
  • 2 tablespoons all-purpose flour (maida)
  • 1 tablespoon cornflour
  • Oil for frying
  • For the BBQ Sauce:
  • 2 tablespoons tomato ketchup
  • 1 teaspoon tamarind pulp (imli)
  • 1 teaspoon soy sauce
  • 1 teaspoon red chili sauce or hot sauce
  • 1 teaspoon jaggery (or brown sugar)
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1 clove garlic, finely minced
  • 1 tablespoon oil
  • 1 tablespoon water (adjust for desired consistency)
Instructions
  1. In a bowl, combine chicken wings with ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix well and marinate for at least 30 minutes.
  2. In another bowl, mix all-purpose flour and cornflour. Coat the marinated chicken wings evenly in this mixture.
  3. Heat oil in a deep pan or kadai. Once hot, fry the chicken wings in batches until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
  4. Heat oil in a small pan. Sauté minced garlic until fragrant.
  5. Add tomato ketchup, tamarind pulp, soy sauce, red chili sauce, jaggery, roasted cumin powder, and smoked paprika. Stir well.
  6. Add water to adjust the consistency and simmer for 2-3 minutes until the sauce thickens slightly.
  7. Toss the fried chicken wings in the prepared BBQ sauce until they are evenly coated.
  8. Serve hot with a garnish of fresh coriander or sesame seeds, accompanied by a side dip of your choice.
