  • 6 chicken wings
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Oil for frying
  • For the Sauce:
  • 1 tablespoon Schezwan sauce
  • 1 tablespoon unsalted butter
  • 1 teaspoon honey
  • 1/2 teaspoon soy sauce
Instructions
  1. Pat the chicken wings dry with paper towels.
  2. In a bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper.
  3. Dredge the chicken wings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
  4. Heat oil in a deep fryer or a large, deep skillet to 175°C.
  5. Carefully add the coated chicken wings to the hot oil, frying in batches if necessary to avoid overcrowding.
  6. Fry the wings for about 8-10 minutes, turning occasionally, until they are golden brown and cooked through.
  7. Remove the wings and place them on a paper towel-lined plate to drain excess oil.
  8. In a small saucepan over low heat, combine the Schezwan sauce, butter, honey, and soy sauce.
  9. Stir until the butter is melted and the ingredients are well combined. Remove from heat.
  10. Place the fried chicken wings in a bowl.
  11. Pour the prepared sauce over the wings and toss to coat them evenly.
  12. Serve the sauced wings hot, accompanied by celery sticks and a side of ranch or blue cheese dressing if desired.
