  • 1/2 cup elbow macaroni pasta
  • 1/4 cup cauliflower florets, steamed until soft
  • 1/4 cup butternut squash, steamed until soft
  • 1/4 cup milk (any kind)
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping
Instructions
  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a blender or food processor, combine the steamed cauliflower, butternut squash, milk, shredded cheddar cheese, and unsalted butter. Blend until smooth and creamy.
  3. In a small saucepan, heat the blended veggie-cheese sauce over medium heat. Stir in salt and pepper to taste.
  4. Add the cooked macaroni to the saucepan with the veggie-cheese sauce. Stir until the pasta is well coated and heated through.
  5. If desired, sprinkle breadcrumbs on top for a crunchy topping.
