Ingredients

Instructions

Rinse the lentils thoroughly under cold water.

Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic, and sauté until soft (about 5 minutes).

Stir in cumin, turmeric, and black pepper. Cook for 1 minute.

Add lentils, vegetable broth, and bay leaf to the pot. Bring to a boil.

Reduce heat to low, cover, and let the soup simmer for 20–25 minutes, or until lentils are tender.

Remove the bay leaf, adjust salt, and serve hot. Garnish with parsley or cilantro if desired.
Note
You can blend the soup partially for a creamier texture or leave it chunky.
Add a squeeze of lemon for a fresh tangy flavor.
This soup pairs well with crusty bread or rice for a complete meal.
