  • 3 tablespoons oil
  • 200 grams paneer, cut into cubes
  • 1 teaspoon cumin seeds
  • 2 green cardamom
  • 2 cloves
  • 3 onions, chopped
  • 1 tablespoon ginger-garlic paste
  • 3 teaspoons red chili powder
  • 1/2 teaspoon turmeric powder
  • 1.5 teaspoon coriander powder
  • Salt to taste
  • 1 teaspoon garam masala
  • Water
  • 3 tomatoes, blended
  • 1 cup capsicum, sliced
  • 1 teaspoon kasoori methi
  • Chopped coriander
  • Ginger juliennes
  • 1 tablespoon cream
Instructions
  1. Heat 3 tbsp oil and shallow fry the paneer cubes until golden brown. Keep them in water and set aside.
  2. In the same oil, add cumin seeds, green cardamom, cloves, and chopped onions. Sauté until the onions turn golden brown.
  3. Add ginger-garlic paste, red chili powder, turmeric powder, coriander powder, salt, garam masala, and a bit of water. Mix well and cook until the masala starts leaving oil.
  4. Add the blended tomatoes to the masala and cook again until the masala starts leaving oil.
  5. Set the masala aside and sauté sliced capsicum. Add 1/2 cup water and the prepared masala. Mix well.
  6. Cook for 2-3 minutes, ensuring the flavors meld together.
Note
  • Adjust the spice levels according to your preference. You can also add a bit of crushed kasoori methi for enhanced flavor.
  • Serve this Paneer Khurchan with naan or roti for a delightful Indian meal experience.
