  • 2 medium-sized tomatoes, chopped
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • 1/2 cup vegetable stock or water
  • 1 tablespoon heavy cream (optional)
  • Chopped fresh basil for garnish (optional)
Instructions
  1. Melt the butter in a small saucepan over medium heat.
  2. Add the chopped onion and garlic and sauté for 2-3 minutes until they turn translucent.
  3. Add the chopped tomatoes, sugar, dried basil, dried oregano, salt, and black pepper. Mix well and cook for 5-7 minutes until the tomatoes are soft and mushy.
  4. Add vegetable stock or water to the saucepan and bring it to a boil.
  5. Reduce the heat and simmer for 10-15 minutes until the soup is thick and flavorful.
  6. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  7. Add heavy cream (if using) and mix well. Heat the soup for another minute.
  8. Turn off the heat and garnish with chopped fresh basil (if using).
Note
  • If you don't have vegetable stock, you can use water or chicken stock instead.
  • You can adjust the consistency of the soup by adding more or less liquid.
  • For a creamier soup, you can add more heavy cream or use half-and-half.
  • This recipe can be easily doubled or tripled to serve more people.
  • You can also add other herbs or spices of your choice, such as thyme or paprika, for additional flavor.
