Ingredients
  • 2 large eggs
  • 1 onion (finely chopped)
  • 1 tomato (finely chopped)
  • 1 green chili (optional, finely chopped)
  • 2 tablespoons coriander leaves (chopped)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (optional)
  • Salt to taste
  • 1 tablespoon oil or butter for cooking
  • Optional Add-ons: Chopped capsicum, spinach, carrots, or grated cheese for added flavor.
Instructions
  1. Crack the eggs into a bowl.
  2. Add salt, turmeric, chili powder, and whisk well until frothy.
  3. Heat oil or butter in a non-stick pan over medium heat.
  4. Add chopped onions and green chili. Stir-fry for 1-2 minutes until onions soften.
  5. Add tomatoes and sauté for another minute until slightly softened.
  6. Pour the whisked egg mixture evenly over the sautéed vegetables in the pan.
  7. Sprinkle coriander leaves on top.
  8. Let the omelette cook on low-medium heat for 2-3 minutes or until the edges firm up.
  9. Flip it gently with a spatula and cook the other side for 1-2 minutes.
  10. Remove from the pan and serve hot with toasted bread, roti, or as a standalone snack.

  • You can add vegetables like capsicum, spinach, or carrots for extra nutrition.
