  • 1 Potatoes
  • 1 cup Spinach (optional)
  • 1 Carrots
  • 1/2 cup Cabbage
  • 1 cup Gram Flour (Besan)
  • 2 tablespoons Rice Flour (optional) for extra crispiness
  • 2 Green Chilies chopped
  • 1 teaspoon Ginger (grated)
  • Spices
  • 1/4 teaspoon Turmeric
  • 1/2 teaspoon Red Chili Powder
  • 1/2 teaspoon Garam Masala
  • 1/2 teaspoon Carom Seeds (Ajwain)
  • Salt To taste
  • Water As needed to make the batter

Instructions
  1. Wash and finely chop or shred the vegetables.
  2. In a large mixing bowl, combine gram flour, rice flour (optional), turmeric, chili powder, garam masala, carom seeds, and salt.
  3. Add water gradually to form a thick batter. The batter should coat the vegetables but not be too runny.
  4. Mix the vegetables into the batter, ensuring they are evenly coated.
  5. Heat oil in a deep pan or wok over medium heat.
  6. Drop spoonfuls of the batter-coated vegetables into the hot oil.
  7. Fry in batches until golden brown and crisp.
  8. Remove the pakoras using a slotted spoon and place them on paper towels to drain excess oil.
Note
  • You can add other vegetables like bell peppers, cauliflower, or zucchini.
  • Use an air fryer or bake the pakoras for a low-oil version.
  • Serve hot with green chutney, tamarind chutney, or ketchup.
