Ingredients
  • 1 cup cooked rice (preferably day-old rice)
  • 1/2 cup mixed vegetables (such as carrots, peas, bell peppers)
  • 1 egg
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste
  • Optional: chopped scallions for garnish
Instructions
  1. Heat vegetable oil in a skillet or wok over medium-high heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until they start to soften.
  3. Push the vegetables to one side of the pan and crack the egg into the empty space. Scramble the egg until cooked.
  4. Add the cooked rice to the skillet and break up any clumps.
  5. Drizzle soy sauce over the rice and vegetables. Mix everything together until well combined.
  6. Continue to stir-fry for another 3-4 minutes until the rice is heated through and slightly crispy.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped scallions if desired.
Note
  • Use day-old rice for the best texture. Freshly cooked rice tends to be too moist and can become mushy when stir-fried.
  • Feel free to add protein such as cooked chicken, shrimp, or tofu to make it a heartier meal.
  • Customize the seasoning with additional spices or sauces like garlic powder, chili flakes, or oyster sauce for extra flavor.
