Ingredients
  • 200 grams Fresh okra (bhindi)
  • 1 Onion, thinly sliced
  • 1 Tomato, finely chopped
  • 2 Green chilies (optional)
  • 1 teaspoon Ginger-garlic paste
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala
  • 1/2 teaspoon Cumin seeds
  • 2 tablespoons Oil
  • Salt to taste
  • Fresh coriander leaves for garnish
Instructions
  1. Wash and pat dry the okra thoroughly to avoid sliminess. Cut off the ends and chop into 1-inch pieces.
  2. Heat 1 tablespoon of oil in a pan. Add the chopped okra and stir-fry on medium heat until slightly crispy. Remove and set aside.
  3. In the same pan, heat the remaining oil. Add cumin seeds and let them splutter. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste, turmeric powder, red chili powder, and coriander powder. Cook until the raw smell disappears.
  5. Toss in the chopped tomatoes and cook until soft and oil separates.
  6. Add the stir-fried okra to the pan. Mix well and cook for 5–7 minutes on low heat, allowing the flavors to blend.
  7. Sprinkle garam masala and adjust salt to taste. Garnish with fresh coriander leaves.
  8. Enjoy hot with roti, paratha, or rice.
Note
  • Ensure the okra is completely dry after washing to reduce sliminess.
  • Avoid over-stirring while cooking to maintain the okra’s texture.
  • Add amchur (dry mango powder) or a squeeze of lemon juice for a tangy twist.
