Ingredients
Instructions
-
Wash and pat dry the okra thoroughly to avoid sliminess. Cut off the ends and chop into 1-inch pieces.
-
Heat 1 tablespoon of oil in a pan. Add the chopped okra and stir-fry on medium heat until slightly crispy. Remove and set aside.
-
In the same pan, heat the remaining oil. Add cumin seeds and let them splutter. Add sliced onions and sauté until golden brown.
-
Add ginger-garlic paste, turmeric powder, red chili powder, and coriander powder. Cook until the raw smell disappears.
-
Toss in the chopped tomatoes and cook until soft and oil separates.
-
Add the stir-fried okra to the pan. Mix well and cook for 5–7 minutes on low heat, allowing the flavors to blend.
-
Sprinkle garam masala and adjust salt to taste. Garnish with fresh coriander leaves.
-
Enjoy hot with roti, paratha, or rice.
Note
- Ensure the okra is completely dry after washing to reduce sliminess.
- Avoid over-stirring while cooking to maintain the okra’s texture.
- Add amchur (dry mango powder) or a squeeze of lemon juice for a tangy twist.
