Ingredients
  • 150 grams Minced Chicken
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • 1 teaspoon lemon juice
  • Skewers for grilling (or grill pan if unavailable)
  • 1/2 basmati rice (soaked for 30 minutes)
  • 1 tablespoon ghee or vegetable oil
  • 1/2 medium onion (thinly sliced)
  • 1/2 teaspoon cumin seeds
  • 1 bay leaf
  • 2 green cardamom pods
  • 1 small cinnamon stick
  • 1/2 teaspoon biryani masala
  • 1/2 teaspoon saffron threads (soaked in 2 tbsp warm milk)
  • 1/2 chicken stock or water
  • Fried onions
  • Fresh mint and coriander leaves
Instructions
  1. In a bowl, mix minced chicken with ginger-garlic paste, spices, chopped coriander, salt, and lemon juice.
  2. Shape the mixture around skewers or into small logs if skewers are unavailable.
  3. Grill the kebabs on a grill pan or an open flame until golden brown and cooked through. Set aside.
  4. Heat ghee/oil in a pan. Add cumin seeds, bay leaf, cardamom, and cinnamon. Sauté until aromatic.
  5. Add sliced onions and sauté until golden brown.
  6. Stir in soaked rice, biryani masala, and salt. Mix gently.
  7. Add chicken stock or water and cook covered on low heat until rice is 80% cooked.
  8. In a pot, layer the cooked rice and chicken seekh kebabs.
  9. Drizzle saffron milk on top and garnish with fried onions, mint, and coriander.
  10. Cover tightly and steam (dum) for 10 minutes on low heat.
  11. Fluff up the biryani layers and serve hot with raita or your favorite side dishes.
Note
  • You can substitute chicken seekh kebabs with lamb or vegetarian alternatives for variation.
  • Adjust the spice level to your preference.
  • Serve with raita, salad, or papad for a complete meal.
