In a bowl, mix minced chicken with ginger-garlic paste, spices, chopped coriander, salt, and lemon juice.

Shape the mixture around skewers or into small logs if skewers are unavailable.

Grill the kebabs on a grill pan or an open flame until golden brown and cooked through. Set aside.

Heat ghee/oil in a pan. Add cumin seeds, bay leaf, cardamom, and cinnamon. Sauté until aromatic.

Add sliced onions and sauté until golden brown.

Stir in soaked rice, biryani masala, and salt. Mix gently.

Add chicken stock or water and cook covered on low heat until rice is 80% cooked.

In a pot, layer the cooked rice and chicken seekh kebabs.

Drizzle saffron milk on top and garnish with fried onions, mint, and coriander.

Cover tightly and steam (dum) for 10 minutes on low heat.
