  • 1/2 cup cooked rice (preferably leftover rice)
  • 1/2 cup plain yogurt (curd)
  • 1 tablespoon oil or ghee
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (split black gram)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1 green chili, finely chopped (optional)
  • A few curry leaves
  • A pinch of asafoetida (hing)
  • Salt, to taste
  • Freshly chopped coriander leaves for garnish
Instructions
  1. Mash the cooked rice using a fork or your hands until it becomes soft and slightly mushy.
  2. In a bowl, whisk the yogurt until smooth. Add the mashed rice to the yogurt and mix well to combine. Adjust the consistency by adding more yogurt or rice as desired.
  3. Heat oil or ghee in a small pan. Add mustard seeds and let them splutter. Then, add urad dal, cumin seeds, grated ginger, green chili (if using), curry leaves, and asafoetida. Fry for a minute until the dal turns golden brown and aromatic.
  4. Pour the tempering over the curd rice and mix well.
  5. Season with salt and give it a final mix.
  6. Garnish with freshly chopped coriander leaves.
  7. Serve the Curd Rice chilled or at room temperature as a refreshing side dish or light meal.
Note
  • You can add additional toppings or mix-ins to the curd rice, such as grated carrot, chopped cucumber, pomegranate seeds, or roasted peanuts for added texture and flavor.
  • Adjust the spiciness by adding or reducing the amount of green chili according to your taste preference.
