  • 1/4 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • Salt and pepper to taste
  • Optional: chopped spring onions for garnish
Instructions
  1. Heat vegetable oil in a pan or wok over medium heat.
  2. Add minced garlic and grated ginger to the pan and sauté for a minute until fragrant.

  4. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
