Ingredients
  • 150 grams chicken breast or thigh, cut into pieces
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 tomato, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground coriander
  • 1/4 cup coconut milk
  • 1/4 cup water (or chicken broth)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1 teaspoon vinegar (optional, for tanginess
Instructions
    Cook the Chicken
  1. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn golden brown.
  2. Add ginger-garlic paste and sauté for 30 seconds until fragrant.
  3. Add the chopped tomato, turmeric, red chili powder, garam masala, and ground coriander. Cook until the tomato softens and oil separates from the masala (spice mixture).
  4. Simmer the Curry
  5. Add the chicken pieces to the pan, mix well to coat with the spices, and cook for 3-4 minutes until lightly browned.
  6. Pour in coconut milk and water (or broth). Stir well and bring to a boil.
  7. Lower the heat and simmer for 10-12 minutes, or until the chicken is cooked through and tender. Adjust seasoning with salt and vinegar (if using).
Note
  • Adjust the amount of red chili powder according to your preferred spice level.
  • If you prefer a richer curry, you can increase the amount of coconut milk.
  • This dish pairs beautifully with steamed rice, chapati, or even naan.
