Ingredients
Instructions
Cook the Chicken
-
Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn golden brown.
-
Add ginger-garlic paste and sauté for 30 seconds until fragrant.
-
Add the chopped tomato, turmeric, red chili powder, garam masala, and ground coriander. Cook until the tomato softens and oil separates from the masala (spice mixture).
Simmer the Curry
-
Add the chicken pieces to the pan, mix well to coat with the spices, and cook for 3-4 minutes until lightly browned.
-
Pour in coconut milk and water (or broth). Stir well and bring to a boil.
-
Lower the heat and simmer for 10-12 minutes, or until the chicken is cooked through and tender. Adjust seasoning with salt and vinegar (if using).
Note
- Adjust the amount of red chili powder according to your preferred spice level.
- If you prefer a richer curry, you can increase the amount of coconut milk.
- This dish pairs beautifully with steamed rice, chapati, or even naan.
