Ingredients
    For Jalebi:
  • 1 cup all-purpose flour (maida)
  • 1 tablespoon besan (gram flour)
  • 1/2 teaspoon baking powder
  • 1/2 cup curd (yogurt)
  • A pinch of saffron strands (optional)
  • 1/2 cup sugar
  • 1/2 cup water
  • Oil or ghee for deep frying
  • For Fafda:
  • 1 cup besan (gram flour)
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Water to knead the dough
  • Oil for deep frying
Instructions
    For Jalebi:
  1. In a bowl, mix all-purpose flour, besan, baking powder, curd, and saffron strands. Add water gradually to make a smooth batter.
  2. Cover the batter and let it ferment for a few hours or overnight.
  3. In a separate pan, combine sugar and water to make a sugar syrup. Boil until it reaches a one-string consistency. Keep the syrup warm.
  4. Heat oil or ghee in a deep frying pan. Fill a piping bag with the Jalebi batter.
  5. Pipe the batter into hot oil in a spiral shape to make Jalebis. Fry until they turn golden and crisp.
  6. Remove the Jalebis from the oil and immediately dip them into the warm sugar syrup.
  7. Let the Jalebis soak in the syrup for a minute or two, then take them out and place them on a plate. Garnish with chopped nuts (optional).
  8. For Fafda:
  9. In a mixing bowl, combine besan, turmeric powder, red chili powder, asafoetida, and salt.
  10. Gradually add water and knead the mixture into a smooth dough.
  11. Heat oil for frying. Take small portions of the dough and roll them into thin strips.
  12. Gently slide the strips into the hot oil and fry until they turn golden brown and crisp.
  13. Remove the fafdas from the oil and drain on a paper towel.
  14. To Serve:
