Instructions
Peel and dice ripe mangoes, ensuring they are juicy and sweet.
Add the mangoes, coconut yogurt, coconut milk, and cardamom powder to a blender. Blend until smooth and creamy.
Taste and add maple syrup or a sweetener if necessary, based on your preferred sweetness level.
Add ice cubes and blend again for a chilled drink. Pour into glasses and garnish with a sprinkle of cardamom or chopped pistachios (optional).
Note
This recipe is vegan and lactose-free, thanks to coconut yogurt.
Adjust the thickness with more or less coconut milk, and add nuts or seeds for texture.
While mango lassi is traditionally a summer drink, you can enjoy it year-round using frozen mangoes.
