  • 6 boiled potatoes, mashed
  • Salt, to taste
  • 1.5 cup cornflour
  • 1 tablespoon garlic, finely chopped
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon chili flakes
  • 1 tablespoon vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds
  • 4 tablespoons boiling oil
Instructions
  1. Mash the boiled potatoes in a large bowl.
  2. Add salt to taste and cornflour to the mashed potatoes.
  3. Knead the mixture into a smooth dough. If the dough is too sticky, add more cornflour.
  4. Take a portion of the potato dough and roll it into a noodle shape.
  5. Bring water to a boil in a large pot. Add the potato noodles and boil until they float on the water's surface (approximately 8-9 minutes).
  6. Once cooked, drain the noodles and let them cool by adding cold water.
  7. In a mixing bowl, combine chopped garlic, Kashmiri red chili powder, chili flakes, vinegar, soy sauce, and sesame seeds.
  8. Toss the cooled potato noodles with the prepared sauce, ensuring an even coating.
  9. In a small pan, heat the oil until it's boiling. Carefully pour the hot oil over the potato noodles mixture.
  10. Mix the noodles thoroughly with the hot oil and sauce, ensuring all ingredients are well combined.
