    Ghee or Oil (for cooking):
  • 1 teaspoon Cumin Seeds
  • 2 medium Onions, finely chopped
  • 1 tablespoon Ginger-Garlic Paste
  • 2 medium Tomatoes, chopped
  • Cashews, soaked (around 10-12)
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder (adjust to taste)
  • 1/2 teaspoon Garam Masala
  • Salt, to taste
  • 2 tablespoons Fresh Cream
  • Saffron Strands (optional, soaked in warm milk)
  • Paneer (Indian cottage cheese), cut into cubes
  • 1/4 Cardamom Powder
  • Chopped Fresh Coriander Leaves (for garnish)
  • For the Shahi Paneer:
  • 200 grams paneer, cubed
  • 1 cup onion, finely chopped
  • 1 cup tomato, finely chopped
  • 1/4 cup cashews, soaked in warm water
  • 1/4 cup cream
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cardamom powder
  • 1/4 teaspoon saffron strands (optional)
  • Salt to taste
  • 2 tablespoons ghee or oil
  • Chopped fresh coriander leaves for garnishing
Instructions
  1. Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes and cook until they turn soft and mushy.
  5. Drain the soaked cashews and blend them into a smooth paste. Add this cashew paste to the pan and mix well.
  6. Add turmeric powder, red chili powder, garam masala, and salt. Cook the masala until the oil starts to separate from it.
  7. Add cream and mix well. You can also add saffron strands soaked in a little warm milk for extra flavor and color.
  8. Gently add the paneer cubes to the gravy and let them simmer for a few minutes, allowing the flavors to meld.
  9. Sprinkle cardamom powder over the curry and give it a final stir.
