  • 1/2 cup sliced bell peppers
  • 1/2 cup mushrooms, sliced

  • 1 teaspoon sugar (optional)
  • 1 tablespoon vegetable oil

Instructions
  1. Rinse the Rice: Measure the desired amount of rice and rinse it under cold water until the water runs clear to remove excess starch.
  2. Add Water: In a pot, add water in a ratio of 2 cups of water for every 1 cup of rice.
  3. Boil: Bring the water to a boil over high heat.
  4. Simmer: Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15-20 minutes (or according to the type of rice you're using).
  5. Fluff and Serve: Turn off the heat and let the rice sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  6. Cook the Vegetables: Heat vegetable oil in a pan over medium heat. Add the sliced carrots, bell peppers, and mushrooms. Stir-fry until the vegetables are tender but still crisp, about 5-7 minutes. Add the spinach in the last minute of cooking, allowing it to wilt.
  7. Season: Add soy sauce and sugar to the pan (if using sugar). Stir well to coat the vegetables in the sauce. Cook for another 1-2 minutes.
  8. Assemble the Donburi: Spoon the cooked vegetables over the bowl of rice. Drizzle with a little more soy sauce if desired.
  9. Garnish and Serve: Sprinkle with sesame seeds and chopped green onions. For a final touch, add a drizzle of sesame oil. Serve warm.
