  • 1 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 2 medium potatoes, boiled and diced
  • 1/2 cup green peas, boiled
  • 1/4 cup chopped onion
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon garam masala powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon amchur (dried mango powder)
  • Salt to taste
  • Oil for deep frying
Instructions
  1. In a mixing bowl, combine the flour, vegetable oil, and salt. Mix well.
  2. Add the water slowly, and knead the mixture to form a stiff dough. Cover the dough with a damp cloth and set it aside for 30 minutes.
  3. In a pan, heat some oil and add the cumin seeds. Let them splutter.
  4. Add the chopped onions and sauté until they are translucent.
  5. Add the diced potatoes and green peas, and mix well.
  6. Add all the spices - coriander powder, garam masala powder, red chili powder, amchur, and salt. Mix everything well and cook for 2-3 minutes.
  7. Let the mixture cool.
  8. Roll out the dough into small circles and cut each circle into half.
  9. Take each half and fold it into a cone shape, sealing the edges with water.
  10. Stuff the cone with the potato mixture and seal the top edge with water.
  11. Deep fry the samosas in hot oil until golden brown.
  12. Serve hot with mint chutney or tamarind chutney.
