Ingredients
  • 150 grams boneless chicken thigh or breast
  • 2 tablespoons soy sauce
  • 2 tablespoons honey (or brown sugar)
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon sesame oil
  • 1 clove garlic, finely minced
  • 1/2 teaspoon grated ginger
  • 1 teaspoon cornstarch mixed
  • 1 tablespoon water (to thicken the sauce)

Instructions
  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
  2. Set aside half the marinade for basting and mix the remaining half with the cornstarch slurry. Heat it in a small pan until it thickens into a glaze.
  3. Place the chicken pieces in a another bowl or zip-lock bag and pour the non-thickened portion of the marinade over them.
  4. Let it marinate in the refrigerator for at least 30 minutes.
  5. Thread the marinated chicken onto the soaked skewers.
  6. Preheat a grill pan or outdoor grill to medium-high heat.
  7. Grill the skewers for 5-7 minutes on each side, brushing with the thickened teriyaki glaze, until the chicken is cooked through and slightly charred.
  8. Transfer the skewers to a plate, sprinkle with sesame seeds and green onions, and serve immediately.
Note
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Serve with a sprinkle of sesame seeds and chopped scallions for added flavor and presentation.
