Ingredients
    Masala Paste
  • 1 tomato, finely chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 piece of ginger, minced
  • 1 green chili, chopped (optional)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon garam masala
  • 1 teaspoon oil
  • For the Curry
  • 100 grams firm tofu, crumbled
  • 1/4 cup diced bell peppers (red or green)
  • 1/4 cup chopped spinach or coriander leaves
  • 2 tablespoons green peas (optional)
  • Salt to taste
Instructions
    Prepare the Masala Paste
  1. Heat 1 tsp oil in a pan.
  2. Add the onions and sauté until golden brown.
  3. Add garlic, ginger, and green chili, and cook until fragrant.
  4. Stir in chopped tomatoes, turmeric powder, red chili powder, cumin powder, and garam masala.
  5. Cook on medium heat until the mixture becomes a paste. Set aside.
  6. Cook the Tofu Scramble
  7. In the same pan, add the crumbled tofu and sauté for 2 minutes.
  8. Add the diced bell peppers, spinach, and green peas (if using).
  9. Mix in the prepared masala paste.
  10. Season with salt and cook for 5 minutes on low heat, stirring occasionally, until the tofu absorbs the spices.
  11. Finish and Serve
  12. Garnish with fresh coriander leaves.
Note
  • Use firm or extra-firm tofu for the best texture.
  • Include mushrooms, zucchini, or grated carrots for added flavor and nutrition.
  • Modify the spice levels to suit your taste.
  • Skip the oil and sauté the onions and spices in water for a healthier version.
