Ingredients
  • 2 cups whole wheat flour (atta)
  • 1/2 cup finely grated carrots
  • 1/2 cup finely chopped spinach
  • 1/2 cup boiled and mashed potatoes
  • 1/4 cup finely chopped onions (optional)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • 1 teaspoon garam masala
  • Salt to taste
  • Water (for dough)
  • Ghee or oil (for cooking)
Instructions
  1. In a bowl, mix wheat flour with water and knead into a smooth, soft dough. Cover and set aside for 15-20 minutes.
  2. In a separate bowl, combine grated carrots, chopped spinach, mashed potatoes, and onions.
  3. Add ginger-garlic paste, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix thoroughly to make a uniform filling.
  4. Divide the dough into equal portions and roll each into a small circle.
  5. Place a spoonful of the vegetable filling in the center, fold the edges, and seal.
  6. Roll again gently into a flat circle.
  7. Heat a tawa (flat griddle) on medium heat. Place the rolled paratha and cook for 1-2 minutes.
  8. Flip and apply ghee or oil. Cook both sides until golden brown spots appear.
  9. Pair with curd, pickle, or a dollop of butter.

  • Serve with yogurt, pickle, or chutney for enhanced flavor.
