In a bowl, mix wheat flour with water and knead into a smooth, soft dough. Cover and set aside for 15-20 minutes.

In a separate bowl, combine grated carrots, chopped spinach, mashed potatoes, and onions.

Add ginger-garlic paste, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix thoroughly to make a uniform filling.

Divide the dough into equal portions and roll each into a small circle.

Place a spoonful of the vegetable filling in the center, fold the edges, and seal.

Roll again gently into a flat circle.

Heat a tawa (flat griddle) on medium heat. Place the rolled paratha and cook for 1-2 minutes.

Flip and apply ghee or oil. Cook both sides until golden brown spots appear.

Pair with curd, pickle, or a dollop of butter.
