Instructions

Roast the Ragi Flour

  1. Heat a non-stick pan on low flame.
  2. Add 2 teaspoons of ghee and the ragi flour.
  3. Stir continuously for 2-3 minutes until the flour is aromatic and slightly golden.

Prepare the Jaggery Syrup

  1. In a small saucepan, mix jaggery with 3 tablespoons of water and let it melt on low heat.
  2. Stir until the jaggery dissolves completely, forming a light syrup. (Strain to remove impurities, if needed.)

Combine Ingredients

  1. Gradually pour the jaggery syrup into the roasted ragi flour while stirring to avoid lumps.
  2. Add a pinch of cardamom powder for flavor.

Cook and Shape

  1. Keep stirring the mixture on low heat until it thickens and comes together like a dough.
  2. Remove from heat and let it cool slightly.
  3. Once warm enough to handle, grease your palms with ghee and shape the mixture into a laddu.

Garnish (Optional)

  1. Roll the laddu in grated coconut or garnish with chopped nuts for added texture.

Note

  • Adjust the sweetness by increasing or decreasing the jaggery amount.
  • Ensure constant stirring to prevent lumps while mixing the jaggery syrup with ragi.
  • Store in an airtight container if making a batch; it keeps well for 2-3 days at room temperature.
