Ingredients
Instructions
Roast the Ragi Flour
-
Heat a non-stick pan on low flame.
-
Add 2 teaspoons of ghee and the ragi flour.
-
Stir continuously for 2-3 minutes until the flour is aromatic and slightly golden.
Prepare the Jaggery Syrup
-
In a small saucepan, mix jaggery with 3 tablespoons of water and let it melt on low heat.
-
Stir until the jaggery dissolves completely, forming a light syrup. (Strain to remove impurities, if needed.)
Combine Ingredients
-
Gradually pour the jaggery syrup into the roasted ragi flour while stirring to avoid lumps.
-
Add a pinch of cardamom powder for flavor.
Cook and Shape
-
Keep stirring the mixture on low heat until it thickens and comes together like a dough.
-
Remove from heat and let it cool slightly.
-
Once warm enough to handle, grease your palms with ghee and shape the mixture into a laddu.
Garnish (Optional)
-
Roll the laddu in grated coconut or garnish with chopped nuts for added texture.
Note
- Adjust the sweetness by increasing or decreasing the jaggery amount.
- Ensure constant stirring to prevent lumps while mixing the jaggery syrup with ragi.
- Store in an airtight container if making a batch; it keeps well for 2-3 days at room temperature.
