In a pan, combine vegan sugar and water. Heat on medium flame and stir until the sugar dissolves. Once dissolved, simmer for 5-7 minutes until it thickens slightly.

Add lemon juice, cardamom powder, and saffron. Keep the syrup warm.

In a bowl, mix the flour, rice flour, baking soda, and turmeric powder.

Gradually add water and stir to form a smooth batter. It should be thick but pourable.

Heat ghee or oil in a pan or kadhai for deep-frying.

Use a piping bag or a squeeze bottle to create spiral shapes directly into the hot oil.

Fry the jalebis until golden and crisp, then remove them from the oil.

Once fried, immediately dip the hot jalebis into the warm sugar syrup for a few seconds.

Remove from the syrup and set aside to cool slightly.
