  1. In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, lemon juice, mustard oil, and salt.
  2. Add the chicken pieces to the marinade and let them sit for 1 hour.
  3. Grill the chicken on a grill pan or in an oven at 200°C until cooked and slightly charred. Set aside.
  4. Boil 2 cups of water in a pot. Add bay leaf, cardamom, cloves, cinnamon, and salt.
  5. Add soaked basmati rice and cook until 70% done. Drain and set aside.
  6. In a pot, spread a thin layer of ghee.
  7. Add half the cooked rice as the base layer.
  8. Place the grilled chicken tikka pieces on top.
  9. Layer the remaining rice over the chicken.
  10. Drizzle saffron milk, sprinkle fried onions, mint, and coriander leaves.
  11. Cover tightly and cook on low heat (dum) for 10 minutes.
  12. Gently fluff the biryani and serve hot with raita.
