Mix yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, and lemon juice in a bowl.

Add chicken pieces, coat them well, and let them marinate for 30 minutes.

Wash and soak basmati rice for 20 minutes.

Boil water in a pot, add bay leaf, cinnamon, cardamom, clove, and salt.

Add the soaked rice and cook until 70% done. Drain and set aside.

Heat a handi or heavy-bottomed pan. Add marinated chicken and cook on medium heat for 10 minutes.

Remove from heat and layer the half-cooked chicken with fried onions, fresh coriander, and mint.

Add a layer of half-cooked rice. Drizzle with saffron milk, kewra water, rose water, and ghee.

Seal the handi with aluminum foil or dough to trap the steam.

Place the handi on low heat and cook for 20 minutes.

Remove from heat and let it rest for 5 minutes before opening.

Serve hot with raita or salan (gravy).
