Preheat your oven to 375°F (190°C).

Roll out the pizza dough on a lightly floured surface. If using crescent roll dough, press together the seams to form one large rectangle.

Cut the dough into two equal-sized rectangles.

On one half of each rectangle, spread 1 tablespoon of pizza sauce, leaving a small border around the edges.

Place 3 slices of pepperoni on top of the sauce on each rectangle.

Sprinkle 1/8 cup of shredded mozzarella cheese over the pepperoni on each rectangle. Add Italian seasoning if desired.

Fold the other half of the dough over the toppings to form a pocket. Press the edges together firmly to seal.

Brush the tops of the pockets with olive oil.

Place the pockets on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes, or until the dough is golden brown and cooked through.

While the pizza pockets are baking, prepare the cheese. In a small microwave-safe bowl, mix together the shredded cheddar and mozzarella cheeses.
