Add Water: In a pot, add water in a ratio of 2 cups of water for every 1 cup of rice.

Boil: Bring the water to a boil over high heat.

Simmer: Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15-20 minutes (or according to the type of rice you're using).

Fluff and Serve: Turn off the heat and let the rice sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.

Cook the Vegetables: Heat vegetable oil in a pan over medium heat. Add the sliced carrots, bell peppers, and mushrooms. Stir-fry until the vegetables are tender but still crisp, about 5-7 minutes. Add the spinach in the last minute of cooking, allowing it to wilt.
