Dry roast the semolina in a pan on medium heat for 2-3 minutes until it turns light brown. Keep it aside.

Heat oil in a pan on medium heat. Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter.

Add chopped onions, green chili, and ginger. Sauté until onions become translucent.

Add mixed vegetables and sauté for 3-4 minutes.

Add 2 cups of water and salt to taste. Bring it to boil.

Add the roasted semolina to the boiling water, stirring continuously to avoid lumps.

Reduce the heat to low and cover the pan with a lid. Let it cook for 5-7 minutes.

After 5-7 minutes, remove the lid and fluff the upma with a fork.

Garnish with chopped coriander leaves.
Note
- Roasting the semolina before cooking gives a nice texture and enhances the flavor of the upma.
- You can add vegetables like carrots, peas, bell peppers, and onions to make it more nutritious and colorful.
- Adjust the amount of water to get the desired consistency of upma. Some prefer it soft and moist, while others prefer it dry and crumbly.
- Adding a squeeze of lemon juice at the end gives a tangy and refreshing taste to the upma.
- Serve hot upma with coconut chutney or pickle for a complete and satisfying breakfast or snack.
