Prepare the Changezi Masala

  1. Dry roast coriander seeds, cumin seeds, fennel seeds, cardamom, clove, and black peppercorns on low heat until fragrant.
  2. Let them cool, then grind into a fine powder. Set aside.

Marinate the Chicken

  1. In a bowl, combine yogurt, ginger-garlic paste, red chili powder, and salt.
  2. Add the chicken pieces, mix well, and marinate for 10-15 minutes.

Cook the Chicken

  1. Heat oil in a pan over medium heat.
  2. Add onions and cook until golden brown.
  3. Add the marinated chicken and cook for about 5 minutes, or until it starts to turn light brown.
  4. Add pureed tomato, turmeric powder, and the prepared Changezi masala.
  5. Cook for 10 minutes, stirring occasionally, until the oil begins to separate from the masala.
  6. Lower the heat, add fresh cream or milk, and mix well. Cook for another 5 minutes until the gravy thickens.

Serve

  1. Garnish with fresh coriander leaves and serve hot with naan or rice.
