In a mixing bowl, add gram flour, semolina, yogurt, water, salt, sugar, ginger paste, and green chili paste. Mix well to form a smooth batter.

Set aside the batter for 10-15 minutes to allow it to rest.

In the meantime, grease a steaming plate or cake tin with oil.

Heat a steamer with enough water on high heat.

Add Eno to the batter and mix well until it becomes frothy.

Pour the batter into the greased plate or cake tin.

Place the plate/tin inside the steamer and steam for 15-20 minutes or until the dhokla is cooked and a toothpick inserted comes out clean.

Allow the dhokla to cool down a bit and then cut it into pieces.

In a small pan, heat oil and add mustard seeds and sesame seeds. Once the seeds start to crackle, turn off the heat and pour the tempering over the dhokla.

Garnish with chopped coriander leaves and serve with chutney.
Note
- Dhokla batter requires fermentation, so it needs to be prepared in advance and left to ferment for a few hours.
- Adding a pinch of eno fruit salt or baking soda helps in achieving a light and airy texture.
- Serve Dhokla with green chutney and tamarind chutney for a delightful combination of flavors.
- Garnish with fresh coriander leaves and grated coconut for added taste and visual appeal.
