Mash the cooked rice using a fork or your hands until it becomes soft and slightly mushy.

In a bowl, whisk the yogurt until smooth. Add the mashed rice to the yogurt and mix well to combine. Adjust the consistency by adding more yogurt or rice as desired.

Heat oil or ghee in a small pan. Add mustard seeds and let them splutter. Then, add urad dal, cumin seeds, grated ginger, green chili (if using), curry leaves, and asafoetida. Fry for a minute until the dal turns golden brown and aromatic.

Pour the tempering over the curd rice and mix well.

Season with salt and give it a final mix.

Garnish with freshly chopped coriander leaves.
