Poha is a traditional Indian breakfast dish made with flattened rice flakes that are tempered with spices and cooked with vegetables. It is a light and fluffy dish with a tangy and savory flavor, often enjoyed with a cup of tea or as a quick snack.

  1. Rinse the poha in running water until it softens, then drain the water completely and set it aside.
  2. Heat oil in a pan and add mustard seeds. Let them crackle.
  3. Add cumin seeds and let them splutter.
  4. Add chopped onion and green chilies, sauté until the onion turns translucent.
  5. Add chopped vegetables, turmeric powder, and red chili powder (if using). Mix well and sauté for a couple of minutes until the vegetables are cooked.
  6. Add salt to taste and mix well.
  7. Add the rinsed poha and gently mix everything together until the poha is evenly coated with the vegetables.
  8. Cover the pan and let it cook for 2-3 minutes on low flame.
  9. Garnish with fresh coriander leaves and serve hot with lemon wedges.

Note

  1. You can add vegetables of your choice
  2. Red chili powder as an optional
  3. Green peas should be fresh or frozen
